Strawberry Rhubarb Coffee Cake :: My Coffee Moment

I'm so excited to share this recipe with you. For years my Gram and Mom have been making Strawberry Rhubarb Pies. That flavor combination has become comfort food to me. It reminds me of family, holidays, and home. I love it.

I think I can safely say I managed to capture that flavor combination in this coffee cake that has become and instant favorite.



I came across this recipe in an old Better Homes and Gardens Issue. With a few minor tweaks, I think it's perfect!

And what goes best with coffee cake? Coffee of course! I must have both cream and sugar in my coffee. Flavored creamer is a must and I've been really enjoying this Caramel Macchiato from International Delight.



This is just what I needed today. A little break with heaven on a plate. a warm and flavorful cup of coffee, and lots of beautiful memories.  Perfection!

Strawberry Rhubarb Coffee Cake
Adapted from: About.com via Better Homes and Gardens

Here's what you'll need:
Filling:
3 cups sliced rhubarb
2 pints fresh strawberries, mashed
2 tablespoons lemon juice
1 cup sugar
1/4 cup cornstarch

Cake:
3 cups all-purpose flour
1 cup sugar
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, died into small cubes
1 1/2 cups buttermilk
2 eggs
1 teaspoon vanilla extract

Topping:
1/4 cup butter or margarine
3/4 cup all-purpose flour
3/4 cup sugar

Let's get baking!

In a large saucepan combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat for about five minutes. Combine sugar and cornstarch. Then, stir into strawberry rhubarb mixture. Bring to a boil over medium heat, stirring constantly until thickened; remove from heat. Allow to cool.

In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. In a separate bowl, beat together buttermilk, eggs and vanilla; stir into crumb mixture. Spread half of the batter evenly into a greased 9x13 baking dish. Carefully spread filling over the batter. Drop remaining batter evenly over filling with a tablespoon.

Topping:

In a medium bowl, melt the butter. (I used the microwave) Then, Stir in flour and sugar until mixture is crumbly then sprinkle over batter.

Lay foil on lower rack to catch any juicy fruit spillovers. Bake at 350° for about 45 minutes, or until cake is done. Cool cake in pan on rack. 


Slice and devour!
